THANKSGIVING TURKEY
Brine:

2 gallons water
2 cups kosher salt
1/3 cup firmly packed brown sugar
1 garlic head, split
1 1/2 tablespoons whole black peppercorns
1 1/2 teaspoons juniper berries
3 bay leaves

1 (10 to 12-pound) turkey
1 small onion, coarsely chopped
1 celery stalk, coarsely chopped
1/2 apple, cored and coarsely chopped
1 small parsnip, peeled and coarsely chopped
1 small quince, cored and coarsely chopped, optional
1/2 cup coarsely chopped fresh parsley with stems
1/4 cup chopped fresh sage leaves
2 bay leaves
1 teaspoon whole black peppercorns
1/2 teaspoon juniper berries
1/4 teaspoon celery seed
3 tablespoons butter, melted

Gravy:
2 tablespoons butter
3 tablespoons all-purpose flour
1 1/2 cups apple cider
2 cups chicken stock
1/4 teaspoon kosher salt
1/8 teaspoon ground pepper

In a pot large enough to hold the turkey, combine all of the brine ingredients and stir. Add the turkey to the pot, cover, and refrigerate for 8 to 10 hours. Remove the turkey from the pot, discard the brine, and rinse the turkey thoroughly under cold water. Pat dry.

Preheat the oven to 275 degrees.

Combine the onion, celery, apple, parsnip, quince, herbs, and spices in a bowl and toss. Spoon into the cavity of the turkey.

Truss the turkey, tying its legs together tightly with kitchen twine. Place the turkey on a roasting rack set in a large roasting pan. Cover tightly with aluminum foil, place in the oven, and roast for 2 1/2 hours.

Uncover the turkey and reserve the foil. Increase the oven temperature to 375 degrees F. Brush the turkey with half of the melted butter and cook for 30 minutes. Brush on the remaining butter and continue cooking for about 1 hour and 15 minutes longer, basting every 30 minutes, until a meat thermometer inserted in the thigh registers 150 degrees. (The internal temperature will rise 10 degrees while the turkey rests).

Transfer the turkey to a cutting board. Pour off the fat from the roasting pan. Spoon the vegetables from the cavity of the turkey into the pan; cover the turkey loosely with the reserved foil, and let rest for 30 minutes.

Meanwhile, make the gravy: Add the butter to the roasting pan with the vegetables. Place the pan over medium heat, using 2 burners if necessary. Use a wooden spoon to stir and brown the vegetables lightly, 3 to 4 minutes. Add the flour and cook for 3 more minutes, stirring occasionally. Stir in the cider, bring to a boil, and cook until reduced and thickened, 2 to 3 minutes, scraping the bottom of the pan to release the turkey drippings. Transfer the gravy to a 3-quart saucepan, add the chicken stock, and bring to a boil. Reduce the heat and simmer gently, stirring occasionally, until the gravy has thickened, about 10 minutes. Pour any juices that have accumulated around the turkey into the pan and continue cooking for 1 more minute. Season with the salt and pepper. Strain the gravy into a warm sauceboat.

Carve the turkey and serve with gravy.

FANTASTIC TURKEY RECIPES
Season or stuff as you do.......put turkey in paper bag....yes paper bag......cook for time allowed, take paper off turkey 45 mins before end of cooking time to brown, very very juicy, make sure you put turkey in pan with paper bag.

Roast turkey as usual. Stuff the bird with wild rice stuffing but the true added secret for great turkey flavor is to baste it with grand marnier. Yum!!!!!

Roast turkey as usual. Stuff the bird with sticky rice, raisins and a few kinds of nuts as stuffing - it's delicious! Just a little tip - you need to cook the rice first.

TASTY POTATOES
This is a very good recipe for making potatoes. Stir fry some bacon bits and chopped onion, then mix with some instant mash potato and add some corn (can). Then make into a patty, cover with breadcrumbs and bake for 15 minutes. It is easy, simple and delicious!

SWEET POTATO CASSEROLE
Filling:
3 cups sweet potatoes (approx. 4 sweet potatoes) - boiled and peeled
1 cup sugar
1/2 stick butter (not margarine)
2 eggs
1/2 cup milk
1 tsp. vanilla

Mash all ingredients together with mixer (not too runny though)

Topping:
1/2 stick butter (not margarine)
1 cup brown sugar
1 cup chopped pecans
1 cup Rice Crispiest (cereal)
small bag of mini-marshmallows

Place sweet potato mixture in buttered 9" x 12" cooking dish
lay topping mixture on top and a small bag of marshmallows
bake at 350 degrees for 35-40 minutes.

BBQ GARLIC TURKEY
Turn on gas grill to medium. Season Turkey with Salt' Pepper, Garlic, and poultry seasoning. Rub Butter all over Turkey . Take fresh garlic about 8 to 10 pieces pierce turkey and shove clove of garlic inside. Repeat as many times as you like. We like garlic so we use at least 10. Place 8 large carrots on bottom of pan to protect Turkey from burning, place Turkey on top of carrots cover with foil and place in bar-b-que. I just cooked a 17 pound turkey in 3 hour and it falls apart and it is juicy including white meat which is actually hard to keep juicy.

ENJOY the less mess easy, delicious way we eat turkey at my house!


SUPERBOWL CHILI
2 lbs chili meat or hamburger (browned and drained)
1 tsp salt- or salt substitute
1/4 C chili powder
6 cloves of garlic
1 whole yellow onion-large
3-4 cups beef broth or water
2 28 oz cans diced tomatoes- not drained
4 jalapenos peppers (optional)
1/2 tsp season salt
1/2 tsp black pepper
1/2 tsp Cayenne pepper (optional)
2 cans kidney beans
1 stalk green onions- diced
1 lg green bell pepper diced

After browning the meat, put all ingredients into a large stew pot and bring to a boil - lower to on medium heat simmer for about 1-1 1/2 hours- or you can put all ingredients into a slow cooker and cook on low heat over night. Serve with crackers or over burritos.

SUPERBOWL PARTY MEATBALLS
2lb of ground beef, 3/4 cup seasoned breadcrumbs, 1 egg, 1tsp salt, 1tsp pepper, 1/2 cup milk. Mix together in bowl and shape into balls. Fry in skillet until brown about 10 minutes making sure all sides are brown. In pot put in large can of tomato sauce, 1tsp oregano, 1/2 tsp garlic powder. Add meatballs and cook 1hr on med heat stirring occasionally. Eat them plain or as a sandwich adding mozorella cheese.

NO BOILING LASAGNE
Prep: 10 minutes Cook: 70 minutes Serves:12
Ingredients:
2 containers (15 oz ea.) ricotta cheese
2 cups shredded mozzarella cheese (about 8oz.)
1/2 cup grated Parmesan cheese
2 eggs
2 jars (1lb 10oz ea.) Ragu Pasta Sauce
12 uncooked lasagne noodles

PREP:
1. Preheat oven to 375o, Combine ricotta, 1 cup mozzarella, 1/4 cup Parmesan and eggs.

2. In 13"x9" baking dish, spread 1 cup Sauce, Layer 4 uncook noodles, 1 cup Sauce and 1/2 of ricotta mixture, repeat. Top with remaining 4 uncooked noodles and 2 cups Sauce. Reserve remaining Sauce.

3. Cover with foil; bake 1 hour. Remove foil; sprinkle with remaining cheeses. Bake uncovered 10 minutes. Let stand 10 minutes. Serve with remaining Sauce, heated

PS: u can add ground beef (cook beef , fry it add condiments, pepper salt, garlic salt,"removed grease when done") spread it to the mixture of cheeses.

SALMON PARTY LOG
1 lb. can Red Salmon( I like soc-eye)
1 Tbsp. lomon juice
1 Tbsp. horseradish
3 Tbsp. parsley
1 8oz. cream cheese
2Tbsp grated onion
1/4 tsp salt
1/2 cup chopped nuts

Drain and flake salmon, mix in next 6 ingred. Chill 2 hr. form into log and roll in nuts and parsley.

AUSSIE POTATO BAKE
Caserole dish
8 - 14 potatoes depending on size of caserole dish and potatoes
Large bottle of thickened cream
Shredded tasty cheese

Pre heat oven to 180 C or 350 F
Slice potatos thinly
Put layer of potatos in dish followed by a layer of cheese
Pour thin layer of cream over potatos and cheese
Repeat steps until caserole dish is full and place in the oven to bake
Bake until potatos are cooked and place thick layer of cheese on top. Bake until melted.

This is so yummy think i might go cook it now lol!

SPAGHETTI SALAD

Pasta of any sort cooked
Tomatoes I use 2 per pound of pasta
Cucumbers I use 1 per pound of pasta
A Spice called Salad Supreme use according to own taste
Italian Dressing I use the super size bottle for 2 pounds of pasta

Mix all together after pasta has cooled and chill till ready to serve.

SKEWERED BEEF AND CORN

4 lb. boneless chuck roast, tnderized
l 1/2 cups ea..canned pineapple juice and red wine
1 1/2 tbsp. instant minced onion
1 1/2 tsp. each Worcestershire and thyme
3/4 tsp. dry mustard
1/4 cup packed brown sugar
1/4 tsp pepper
2 cloves garlic, minced or pressed
1/4 cup melted butter
1/4 cup salad oil
5 ears corn husked
3 green bell peppers, seeded
2 mild red onions
1 pineapple, peeled, cored

Cut meat into cubes and put in lg. bowl (not metal)
stir together pineapplejuice, wine, onion, worcestershire, thyme, mustard, sugar, pepper and garlic... save 1/3 cup.
Pour rest of marinade over meat...coat good. Cover and refrig. for at least 6 hrs.
Take meat out and drain and discard rest of marinade.

Stir together butter, oil and saved marinade. Cut corn into 2 or 3" lengths, peppers and onions into 1 1/2" pieces. pineapple into cubes.
Alternate meat, corn, peppers, onions and pineapple brush with butter mix.
Put on grill about 4 to 6" above hot coals.
15 min. for med. rare...cut to test for med or med well.
This makes about 8 servings and is delicious...time and effort pays off!!!Submitted by: grammaj


DRUNKEN CHICKEN

1 whole chicken {preferable dead}
1 tall can of your favorite beer {buy a six pack you need something to do while the chicken is getting drunk}
olive oil
4 cloves of garlic, crushed
salt and pepper

While the grill is getting hot drink about 1/4 of the can of beer and set the other 3/4 aside. 1/4 needs to be removed so you can add garlic to the can.
Trim some of the fat from the chicken, get rid of the giblets. Rub liberally with your favorite meat rub. I use olive oil, basil, lots of fresh pressed garlic, salt and pepper and a pinch of cayenne, but you can use your favorite blend of seasoning.

Use a can opener to open the top of the can and drop in crushed garlic. Oil the beer can up and place it in the cavity of the chicken so the chicken is standing upright. Cover your grill and cook the chicken until its wings are loose about 2 hrs. Grab the rest of the six pack and enjoy.

EASY FOIL POTATOES

Grill on med. to high grill for 30 to 45 min.'s
Peel and slice or dice 4 medium potatoes
Tear off good size piece of foil. Lay potatoes on foil and slice one medium onion. Add onions over potatoes and dot with butter. And add salt and pepper to taste. Wrap and seal the foil till it is flatten. Be sure to turn at least once.
This is easy to cook on the grill while you are grilling your favorite burgers or ribs or steaks...
